In these tough ecenomic times people need a break more than ever. You deserve a vacation and can still afford it. You can cut corners and still have a wonderful time. The price of fuel is up and so are airfares, so you might want to consider staying in less extravagent accommodations. Perhaps a B&B or Vacation Rental. You may have heard or read “twitterings” about Maui County ” closing down all the B&B’s. NOT true , B&B’s fall under the same catagory as Transient Vacation Rentals but most are legal, permitted and in no jeopard of being shut down. Many Vacation Rentals are also legal and all the “hub bub” is really about the County looking at illegal vacation rentals. Permitted B&B’s offer clean, safe, attractive accomodations for way less than the big resorts. Most have private bathes and include breakfast, parking and internet access for free, something you will pay for at a resort. Many resorts are now adding a “resort charge” to your room rate for your morning newspaper, use of excercise facilities and other ammenities that you may not want or use but will pay for anyway. When the cost of one aspect of your vacation goes up, you can only compensate by cutting costs in other aspects. Who knows - you may find out your hooked on B&B’s so enjoy- life is short so have some fun in the sun now.

I am the Penny in Penny’s Place. As a professional Innkeeper of one of the few legal B&B’s of Maui County, (Maui, Molokai, and Lanai), I am looking forward to reading blogs about our place. We have worked very hard for very long to make our place as good as it can be. We are pleased to be able to offer our guests clean, safe, attractive accommodations at rates much less than those of the big resorts. In addition you don’t have to buy breakfast, pay for wifi parking, or laundry facilities. We serve a complimentary breakfast Mon thru Sat consisting of tropical fruits, (some from our own trees), freshly baked pastry, kona coffee, teas, juices, jams and jellies. Maui County law prohibits us from doing a full cooked breakfast but most find a lighter breakfast is best before an active day in our Maui sunshine. Please visit our website pennysplace.net and take a look at our Holoholo condo while your there. We look forward to meeting you this year - come on over, life is too short to wait and Maui is No Ka Oi, (the best).

I was given this recipe by a wonderful old - young man who was a patient of mine in a nursing facility where I worked as a charge nurse. His mother had passed it on to him in the early 1900s. He told me that even though as children his seven sisters and brothers didn’t get gifts for Christmas, as long as they got fresh baked Molasses cookies, they were grateful.

It has become the old fashioned quintessential Christmas cookie that all my family and friends look forward to receiving from me every year. They are best if not over baked so they are still chewy even after cooling, but they do warm up nicely in a microwave later. Molasses cookies impregnate the whole house with the aroma of an old fashioned Christmas and are reminiscent of simpler times all year round.

Mix 3/4 cup shortening with 1 cup sugar and 1 egg
Her rules are not too strict and only needed to protect her from the 1% of renters that might trash her place. Penny’s breakfasts were packed with local fruit and were plenty filling. I highly recommend staying at Penny’s Pace Inn Paradise.
